I talk a lot about including an 'easy dinner night' in your weekly meal plan..
The other night was a real "we have nothing in the house for dinner" night. No meat, no beans, just some penne in the cupboard and what's left from our fruit & veg this week.
So I cooked the pasta plain and added some cut up yellow capsicum, cucumber, tomato and a bit of grated cheese on the side. That's it.
Georgia dumped her salad into her pasta bowl and told me what a beautiful rainbow pasta I made, and Sophie ate everything colour by colour without giving it a second thought.
Just goes to show, dinner doesn't have to be fancy, on busy days you can keep it simple and in real life no one needs 5 star cooking every day and you'll still be mother of the year :)
